Making Pasta – take 1

So today I made my first attempt at making homemade pasta.  I bought a book a couple weeks back on making pasta.  It’s been a pretty simple read and I like how the recipes are simple and straight forward.  So far Im enjoying the book!  So today I took a crack at the basic recipe.  It’s pretty straight forward.  4 eggs and 14 ounces of flour.  Thats it!  Thats what I love about making things from scratch – you know exactly what’s going into it.  So you just put the flour on the counter and make a nest for the eggs and then mix it all together…

Then you kneed it for 8 minutes, wrap it up in plastic, and let it chill for 30 minutes…


Afterwords you roll it out as thin as you can.  This is where I ran into trouble.  This dough is tough.  I tried rolling out a third of it as thin as I could and after about 10 minutes I just couldn’t get it as thin as I wanted.  This is where a pasta roller would kick in (and yes I already ordered one for next time).

Once it was rolled out, you rolled it up and then cut it into strips to make the noodles…

Then you unrolled the strips into the actual noodles and put them in a bowl lightly floured…

As you can see – they came out uber thick.  Way too thick but I cooked them anyways.  They turned out ok, but it was very clear that they were just way too big.  Im anxious for the pasta press to show up so that I can try it again.  The dough seemed like it turned out great so its just the technique that I think needs some reforming.  More to come soon…
